Tonight I Made a Chinese Chicken and Mushroom curry. The paste I use creates a curry that is exactly the same as you would get from a Chinese takeaway.
You can buy this paste from an international supermarket or a Chinese supermarket. It’s very cheap and you can make around 4 curries from each pot.
The other ingredients needed for this dish are
Chicken Breasts (I used 2 and I cooked for three people)
1 packet of mushrooms
1 bag of long grain rice
1 bag of prawn crackers
First thing to do its chop the chicken into chunks, onions into chunks and the mushrooms into quarters. Put the chicken, onions and mushrooms into a saucepan and cook through until the chicken is sealed.
Next the paste needs mixing with boiling water.
I mix 3 tablespoons of the paste with 1 and a half pints of water. If the sauce needs to be thicker just add a bit more paste at the end.
When the paste Is fully dissolved add the sauce to the chicken mixture and stir, bring to the boil and simmer for around 20 minutes.
While the curry is cooking, cook up the rice.
When the rice is cooked, fry the rice with 2 eggs and a couple of dashes of soy sauce to create egg fried rice.
Serve with prawn crackers and enjoy.
