My love for cooking started when I had my second child. We had less disposable income and I wanted to create tasty meals that were also cheap.
My fiance Andy loves lasagne but I’m not to keen on beef mince, so I decided to replace the beef mince with lots of vegetables and what I created was a taste explosion.
The recipe and ingredients needed are as follows.
3 peppers red, yellow and green
Packet of mushrooms
1 bag of baby spinach
I packet of tomatoes
Your favorite red and white lasagne sauce
lasagne sheets ( I use fresh ones)
1 packet of grated 3 cheese
Start by chopping up all the vegetables apart from the tomatoes into cubes, then add to a saucepan. Turn on the heat and soften.
Add a layer of spinach into a lasagne dish then add half the tomato and vegetable mixture.
Put the lasagne sheets on top of the tomato mixture, then add half a jar of the white sauce.
Then repeat the process of adding a layer of spinach, tomato mixture, lasagne sheets and white sauce.
On the last layer instead of adding spinach, add rows of sliced tomato on top of the last layer of white sauce.
Then add the cheese evenly on the top.
Put In the oven on gas mark 5 for 30 minutes or until the cheese is golden brown and crispy.
Take out the oven and serve with a crispy side salad and garlic bread.
